Sweet Potato Burger

I am loving my sweet potato and who doesn’t love burgers?

Ingredients

  • 150 g extra lean mince
  • 2 medium sized courgettes
  • 1/3 red pepper chopped
  • 2 Slices onion chopped
  • 1 Pinch Pink Himalayan salt
  • 1 Pinch Black pepper
  • 1/2 tea spoon ground ginger
  • 1 table spoon olive oil
  • Chopped parsley
  • 1 whole sweet potato

Instructions

  1. Brown onions in olive oil on medium heat in saucepan and add red pepper and diced courgettes to onions.

    Season mince with salt, pepper and ground ginger, then add parsley.

    Once the onion mix is cooked, remove from heat and pour into mince bowl.

    Stir pan ingredients into mince mix.

    Make 3 balls and flatten into burger shape.

    Place back in same pan and fry on medium heat for 6 minutes flipping regularly.

    Steam diced sweet potato in a little water in a microwave-safe container. Cover with cling wrap and poke a hole with a fork and microwave for 7 minutes.

    Mash and add a dash of cinnamon to the mashed sweet potato

    Scoop a good sized sweet potato on a plate for 3 servings

    Place burger onto sweet potato scoops and garnish with green leaves

Sweet Chilli Chicken

I am all about quick and easy, now just add some sweet and spicy chicken on a bed of green beans. This is one sure way to get my fussy teen daughter to eat her greens.

Ingredients

  • 100 g green beans
  • 150 g Chicken Breast
  • 1/3 Red Pepper
  • 1/2 chopped onion
  • 1 chopped spring onion
  • 1 cup diced mushrooms
  • 1 pinch Chopped basil
  • 1 Pink Salt to taste
  • 1 table spoon olive or coconut oil
  • 1/2 tea spoon cumin
  • 1/2 tea spoon finely chopped ginger
  • 1/2 tea spoon chilli flakes
  • 1/2 cup almond or coconut milk
  • 1/4 cup honey
  • Sprig of coriander

Instructions

  1. Steam green beans in a little water in a microwave-safe container. Cover with cling wrap and poke a hole with a fork and microwave for 6 minutes.

    Heat oil in saucepan and brown chopped onions

    Cut chicken breast into small cubes

    Stir chicken cubes and mushrooms into browned onions

    Add ginger, spring onion, red pepper and seasoning

    Simmer for 5 minutes on medium heat

    Gently pour milk and honey over chicken

    Stir gently for 3 minutes on medium heat

    Add coriander just before removing from heat

    Dish greens beans onto plate and top with creamy chicken and mushrooms

Protein Punch Salad

This lunch makes me forget all about snack time.

Ingredients

  • 1 cup baby spinach
  • 1 cup sliced lettuce
  • 1/2 red pepper
  • 5 cherry tomatoes
  • 1 kiwi
  • 2 large eggs
  • 1 matchbox sized feta
  • Pink salt
  • Black Pepper
  • 1 tea spoon Olive oil
  • 1 tea spoon Lemon juice

Instructions

  1. Boil 2 eggs for 3 to 6 minutes depending on how you like your eggs. For a not too soft and a not too hard like mine – I boil mine for a solid 4 minutes.

    Place your washed baby spinach, lettuce, chopped red pepper, halved cherry tomatoes and sliced kiwi in your salad bowl.

    Remove eggs from heat. Pour down hot water and add cold water onto eggs and leave to cool down for a few minutes, then peel. Cut eggs in small pieces and place o top of salad mix.

    Season with salt and pepper

    Break feta cheese into chunks and sprinkle over salad

    Drizzle olive oil and lemon juice for dressing

Island-style Chicken salad

I literally sip on coconut water while I have this salad on my patio with my shades. I can almost swear that I even feel the warm sand between my toes…oh no, wait- it’s dust. I didn’t sweep the patio yesterday. Still love my salad.

Tangy Zoodle Fest

My famous zesty zoodles got featured in a national health magazine…not ‘somme so’

This bolognaise on another level…and it won’t sit on the hips😉

Ingredients

  • 150 g lean beef mince
  • 100 g spiralized baby marrow (zoodles), Cooked
  • 5 chopped cherry tomatoes
  • 1/2 onion chopped
  • 1 teaspoon coconut oil
  • 1 garlic clove chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried sweet basil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried chilli flakes
  • 1/2 Cup chopped red and yellow peppers
  • 1/2 Cup chopped fresh pineapple
  • 1/4 Cup water
  • 1 tablespoon of fresh parsley
  • 1 tablespoon Parmesan cheese
  • Fresh coriander

Instructions

  1. Saute onion in coconut oil in medium sized pan until translucent, then add garlic and cherry tomatoes.

    Add mince and saute for another 2 minutes.

    Stir in herbs and chilli flakes.

    Add peppers and pineapple.

    Add water as needed. Simmer for 5 minutes.

    Stir in parsley and coriander just before removing from heat

    Remove mince from heat.

    For Zoodles: I use conveniently spiralised and packaged, microwavable zoodles that I place in microwave for about 6 minutes. (Read easy instructions though)

    Dish cooked zoodles onto plate, top with mince and don’t forget the sauce!

    Sprinkle grated parmesan cheese over your yummy dish and garnish with leftover coriander and parsley.
